I am setting up a website for a customer and they are interested in buying MC. Would I have full control over which features I want to display on the site and which ones I don't want to show?

yes, pretty much. on the component configuration you can set, for instance, what album details (genre, type...) want to display on the page. also you have control over if you want to show comments, ratings, online player.. these kind of things. you have control over the letterbar, the modules... pretty much everything!
