How can I remove VAT id and Country fields from the new contact form.

    That will remove it from the invoice, but what about the for the joomla user fills out. I'm try to make it as simple as possible for my customer

    well you would need to remove them from the /administrator/components/com_invoices/templates/invoice/recipient.php
